

Sometime a while back I had heard a recommendation to make French Toast using Italian holiday bread Panettone. Now, whenever we come upon panettone in the store we grab one and enjoy!
Panettone and French Toast purists will probably be aghast, but it is delicious!
4 eggs
1/2 loaf panettone, sliced 3/4 inch thick
1/2 cup milk
Generous splash vanilla extract
Scramble the eggs with the milk and vanilla in a flat-bottomed vessel like a casserole dish.
Dip each slice of panettone into the egg mixture, briefly... Do not let it soak up too much, or the panettone will fall apart.
Gently place on an oiled griddle or pan. Repeat with each slice until griddle is full. Our griddle is large enough for all four slices, so I poured the excess egg mixture onto the slices and let them cook it in.
Turn each slice after 3 or 4 minutes, let cook for 3 or 4 more minutes.
Enjoy with your favourite syrup or preserves!
