Lunch from Pierogi Squad Food Truck


A new food truck that vends pierogi was nearby today, so I ventured out to try them. Pierogi Squad had a good variety, but no assortments from what I saw. I got the 8-for-$10 mushroom and sauerkraut, they were very tasty and not too doughy... But I only got seven pierogi in the container...

Maybe next time I will try one of the fruit varieties, but keep an eye peeled for their truck - very good food to be had!

Roast Chicken with Sumac and Red Onion

on the web an it sounded so tasty. Chicken thighs and red onions are marinated in olive oil, garlic, lemon juice, and spices, then roasted and served over flatbread with a sprinkle of fresh parsley and more sumac powder. 
Very tasty! I tried toasting the flatbread over the gas burner, but we also tried it untoasted, and I think we preferred it untoasted as it seemed to soak up the juices better. 
Definitely an addition to the recipe box!

Instant Pot Beef Stroganoff

My mom is a good cook, most everything she made for us was a big hit... Except for liver, even her magic touch couldn't make liver palatable. Her Beef Stroganoff was a childhood favourite, and something I probably haven't had since the last time she served it - maybe 25 years ago?

I found a good-sounding recipe for Instant Pot Beef Stroganoff, and had to give it a try...

Served over egg noodles, with broccoli and asparagus. Very tasty! Lots of mushrooms, with fresh onion, garlics, thyme, and parsley, definitely will be a repeat performance!

Pizza Pizza Thursday - Garden Fresh Basil and Rosemary

The garden is revving-up for the growing season, and that means fresh herbs! I combined the basil leaves and rosemary with pepperoni and garlics, all supported by Rocky Rococo's pizza sauce. 

Darned tasty pizza! Great way to ease into "Work from Home Friday"!

Weekends are made for... Tepsi Kebab!

A forecasted rainy Saturday calls for comfort food, especially when it is cool enough to use the oven without heating up the house too badly. A healthier twist on the southern Turkish specialty tepsi kebab (tray kebab) is kind of like meat loaf in a deep-dish pizza pan. I used turkey meat, blended with minced garlics, red and green peppers, red onion, and seven-spice powder. 

Press half into a deep pan (mine is actually a deep-dish pizza pan), add a layer of sliced mozzarella cheese, press the remaining meat mixture into place over the cheese... 

Toss chunks of tomatoes and red and green peppers on top, and drizzle a can of tomato sauce on top, and bake at 450F for about an hour... YUM! 

A lot of leftover liquid was left over from the meat and the minced veg, but the tomato sauce and veg caramelized on top. VERY TASTY!
