Tuesday Kebap Dinner

Good weather was forecast, and I had a hankering for kebap yesterday, so I stopped at the Jewels on the way home yesterday and grabbed some chicken breasts and a green harissa marinade.

I cut up one package of chicken and marinated about half in the harissa, and tossed the other half in some calypso spice rub and let them sit overnight. 

Tonight, I cut up a couple zucchini, skewered the chunks along with the chicken, and slapped them on the grill. 

Kebap are a good quick-cooking dinner, the steel skewers help cook from the inside, while the outside cooks from the direct grill heat. They were done in two shakes, to 180F internal temperature.

YUMMY! That green harissa marinade is deceptively spicy, and the calypso rub had a nice non-hot spice. The zucchini were awesome skewered like that, next time I might do those long skinny eggplants along with!
