It was almost 60F/16C today, sunshine and blue skies, and this called for a nice grilled chicken dinner!
We grabbed a family pack of thighs, green beans, brussels sprouts, and fennel while grocery shopping, and I spiced up the thighs with a seasoning that was gifted to us, Revelation Rub from Counter Culture Condiments (www.DonaldsonGourmet.com). It has a nice combination of breadcrumbs, thyme, basil, onion, salt, and "other spices", so it packs a lot of flavour without being spicy/hot.
The brussels sprouts were cooked on the grill in a foil packet with a little canola oil spray and McCormick Smokehouse Maple seasoning. The fennel bulb was halved and trimmed and sprayed with a bit of canola oil and seasoned with a quick grind of sea salt. The green beans were trimmed then boiled in some salted water with a bit of sugar to help bring out their sweetness.
The chicken was grilled initially skin-side-down to get nice grill marks, render out some of the fat beneath the skin, and crisp the skin too. The thighs were then flipped, and grilled to at least 170F/77C.
Awesome tasty and reasonably healthy dinner! Thank heavens there are some leftovers (nine chicken thighs in total)!
