Stewed Chicken, Stovetop and Oven


Had a taste for my mom's awesome stewed chicken and rice, with Mother's Day coming up tomorrow... I did not have my Instant Pot, so I started on stovetop in a nonstick sautee pan, and finished in a 375F oven.

The chicken thighs were seasoned with salt and pepper, browned skin side down, and combined with sautéed onions and garlic, flour-and-butter roux, and some chicken bouillon.

Forty-five minutes later, it was dinnertime! I had cooked the rice, asparagus, and green beans while the chicken was in the oven, so it all was ready at the same time.

Very tasty! I defatted the sauce and thickened it into a nice gravy, and the rice soaked up all the chicken-and-herb flavours! Much as
I remember from Mom making it for us as children, it also harkened back to what her mother, Babcia (grandmother, po Polsku), used to make for us. A delicious family memory!
